Baked Mojos

To help manage my sugar levels, the doctor prescribed a 2,100 calorie low fat, low sugar diet. Think Cohen where the portions are measured, certain food groups are not allowed, anything fried or processed is a no no, and meals are timed.



Quite a struggle at first, but well into my 3rd week, i have learned to be creative with my daily menu. Desperate times call for desperate measures.

Sharing with you my healthy version of Shakey's mojo potatoes, which was borne out of my craving for french fries. Thr best part is, it is so easy to make and the ingredients are easily accessible.

Ingredients:
8 Baby potatoes, sliced 1/4 inch thick
Milk
Salt
Pepper
Chili powder, McCormick
Olive oil, 1-2 tsps

Procedure:
1. Preheat the oven or turbo broiler at 180 degrees celsius for 20 minutes.
2. Soak the potato slices in milk for 20 minutes
3. In a sheet of tin foil, season both sides of the sliced potatoes with salt, pepper and chili powder. Drizzle with olive oil
4. Cook the potatoes in the turbo or oven for 30 minutes. Turn the potatoes over after the first 15 minutes.
5. You will know the potatoes are ready once they become soft and crispy.



This was my attempt. Not exactly photogenic, but these were yummy. The baby in my tummy is now happy.
