It is, for the next 5 minutes or so here in my time zone, March 14 AKA 3.14 AKA Pi Day.
Math loving Saint Thomas came home from school today and in his way said, "It's March fourteenth."
"I know," I replied.
"Do you know what that means?"
Lucky for me, I had already read a friend's post on Pi Day that morning or I would have forgotten. Also lucky for me, I understand a fraction of how my son's Autistic brain works.
"It's Pi Day."
Thomas smiled and asked me what we were going to do about it.
"I'm making a pumpkin pie," I told him (this is the only kind of pie he has ever tried and liked)
"Perfect."
Impossibly Easy Pumpkin Pie
1/2 cup Reduced Fat Bisquick
1 cup evaporated low-fat milk
1/2 cup fat-free cholesterol-free egg product (Eggbeaters) or 3 egg whites
1 cup canned pumpkin
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1 tablespoon margarine or butter, oftened
1 teaspoon vanilla
1. Heat oven to 350 degrees F. Grease 9-inch pie plate.
2. Stir all ingredients until blended. Pour into pie plate.
3. Bake 35-40 minutes or until knife inserted in center comes out clean. Cover and refrigerate any remaining pie.
