Okay, just in case you ever need it for future (or to manage your current list)
1) Click on 'Friends' (link at the very top in the blue bar wherever you are in FB)
2) In the left column, you will see a button called 'Make a new list'. Click it.
3) It will ask you to name the list. You could call it Limited Profile, or People Who Smell of Poo - whatever takes your fancy.
4) That list will then appear in the left column.
5) In the middle of the page it will then ask you to type a friend's name to add them to a list. When you select them and press enter their name appears below. (or you can select multiple using the link to the right)
6) Then go to Settings (top bar again, on the right) --> Privacy Settings (drops down in a list) --> Profile. From here you can select specific options (e.g. 'Status')
7) For whichever options you want to restrict, select 'Customise' from the drop-down and in the box that pops up, it will ask you who can see the option, and also let you specify who can't see the option. Type 'limited profile' in that bottom space, and voila.
They have made it more difficult to set up now, but it's really worth it. Can save a lot of drama/embarrassment. When new friends add you (or you add new friends) there's a little option in the box that pops up that lets you add them directly to the limited list, or you can do it manually.
It isn't a big deal, but I find it useful for colleagues (i.e. bosses, in my case, bizarrely) that I don't want to offend by ignoring but also don't want to see a) my drunken holiday snaps or b) how much time I spend on that sodding website!
Oh, I should add that photo privacy is managed in the albums themselves, btw. When you create an album you can specify that your Limited Profile friends can't see it, and you can also use the 'Album Privacy' link when you go to 'My Photos' (where it lists all your albums).
God, I need to spend less time on Facebook. Or ask them for a job.

When you create an album you can specify that your Limited Profile friends can't see it, and you can also use the 'Album Privacy' link when you go to 'My Photos' (where it lists all your albums).
