Spaghetti Sauce

Someone wanted a great spaghetti sauce recipe that's made from scratch. This is one that's been in my family since long before I was born, and is just awesome.

AWESOME-IST SPAGHETTI SAUCE IN THE WORLD

1lb hamburger
3-5 italian sausages. It's best to use a mix of mild and spicy/hot. They generally come in 5 link packages, so if you get two, use three of one, and two of the other, then freeze the rest and use later. :)
1 onion
garlic - use as much as you like things garlicy
1 tsp of sugar
1 big pinch of each: oregano, basil, thyme, sage, red pepper
1-2 bay leaves
1 package of spaghetti sauce mix (helps thicken it)
2 8oz cans of tomato sauce
1 small can of tomato paste
Some red wine. You only need a little bit, about 8oz, so use the rest at dinner or just for fun while preparing. :D

1: Brown onion and garlic in olive oil.
2: Add meats and brown. Drain when browned.
3: Add: Spices, tomato sauce, tomato paste, and sugar. Stir.
4: Partially cover - simmer for 1 hour or more. The longer you simmer, the better the taste, in my experience. Not for a ridiculously long time, of course
5: Add: 3 8oz cans of water and 1 8oz can of red wine
6: Bring to a boil and then turn it down to a simmer for about 2 hours. Stir occasionally. Again, the longer the simmer, the better it seems to be. I usually simmer for 2.5 or 2.75 hours.
7: Fall in love with it. It'll make a lot, so freeze the rest in Ziploc or Tubberware plastic containers. We're usually to able to make dinner that night, then freeze three more dinners worth, for me, Laura, and the kid.
