This is the poem I wrote for my Spanish class. I know it's not great because I did it really really last minute (I was actually like 10 minutes late to class). I did manage to make it rhyme, tho. Yay! That was hard.
Imagine volando,
Corriendo,
Una sonrisa en la cara,
Y el viento soplando.
Afuera, hay libertad.
Ni vallas, ni muros,
Solamente la naturaleza, y,
Entre caballo y amazona, amistad.
En la clase,
Lo aprendía ir al trote,
Y al medio galope.
Siempre temía un desastre.
Pero después
De que hubiera practicado,
Por muchas días, y algunas semanas,
Me adapté dentro del mes.
Arriba, abajo,
Con el ritmo del caballo.
A veces fácil,
A veces trabajo.
Antes de que
Tomara la clase,
Nunca había saltado,
Pues, un acción nuevo fue.
La profesora aconsejó,
Que yo lo agarriera fuerte,
La crin del caballo.
Y de caer protejó.
Entonces, preparó,
El caballo trotó,
Nos acercó, y…
Mi corazón paró.
Ahora, me encanta saltar,
Y cada vez que hago,
Un poco, me exalta.
Pero el temor no faltar.
Cada vez, estoy nerviosa.
Sin embargo,
Siempre tengo una sonrisa, porque
Mi felicidad está muy copiosa.

Here it is in English if you're interested. It's not quite the same, tho, since it's translated.
Horseback riding
When I go horseback riding,
It’s like a rollercoaster,
With one difference…
I like horseback riding.
It’s incredible that something so simple
Can be so fun.
And although sometimes it’s a little hard,
At the same time it’s always nice.
Imagine flying,
Running,
A smile on the face,
And the wind blowing.
Outside, there’s freedom.
No fences or walls,
Just nature, and,
Between horse and rider, friendship.
In class,
I learned to trot
And canter.
I always feared a disaster.
But later,
After I had practiced
For many days, and several weeks,
I adapted within the month.
Up, down,
With the rhythm of the horse.
Sometimes easy,
Sometimes work.
Before I took
The class,
I had never jumped,
So it was a new feat.
The professor advised
That I grip tightly,
The horse’s mane.
And it protected me from falling.
So then, I got ready,
The horse trotted,
We got close, and…
My heart stopped.
Now, I love to jump,
And every time I do it,
I get a little caught up in it.
But the fear isn’t gone.
Every time, I’m nervous.
However,
I always wear a smile, because
My happiness is abundant.
