We made palak paneer last night, and I just wanted to express my triumph at making a pretty much perfect batch of fried
paneer. Ket's mom told me after tasting my last batch, which was kind of chewy, that I was frying it at too low a temperature.
I cranked up the temperature this time and it turns out she was absolutely right. My little cheese cubes are all golden-brown and crispy on the outside and soft and crumbly-white on the inside. I win!
