Grilled Citrus-Honey Chicken -- 4 servings
1 tsp grated orange zest
1/2 cp fresh orange juice
3 tbl lemon juice
2 tbl honey
1 tbl extra virgin olive oil
1 clove garlic, minced
1/2 tsp coarsely ground black pepper
1/4 tsp salt
1/4 tsp ground cinnamon
4 bone-in chicken breast halves, skinned and trimmed
Snipped fresh chives (optional)
Orange wedges (optional)
In a glass measure, with a fork, mix the orange zest, orange juice, lemon juice, honey, oil, garlic, pepper, salt and cinnamon until well blended. Pierce the chicken breasts on both sides with a sharp knife, put it in a large Ziploc Bag and pour in the juice mixture. Seal the bag and massage gently to coat the chicken with the marinade. Place the bag in a dish or bowl and marinate in the refrigerator for 1-2 hours.
Heat a barbecue grill to medium. Drain the chicken marinade into a small saucepan and bring to a boil over med heat. Boil 2 mins, until thickened to a glaze.
Place the chicken on the grill and brush with some marinade. Cover and grill, basting two or 3 times more, and turning once, for about 12 mins, until golden and cooked through.
If desired, garnish with the chives and serve with the orange wedges.
