Spiced Lamb Chops w/Mango-Kiwi Relish -- 4 servings
4 bone-in rib or loin lamb chops (5-6 oz each), well trimmed
1/2 tsp ground cumin
1/2 tsp ground ginger
1/4 tsp turmeric
1/8 tsp ground nutmeg
1/8 tsp ground cinnamon
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp sugar
1 ripe mango, peeled and chopped
2 ripe kiwifruits, peeled and chopped
2 tbl chopped fresh mint leaves
If the chops are thick, pound them a little with the flat side of a chef's knife or the flat side of a meat mallet, so that they cook more evenly.
In a cup, mix the cumin, ginger, turmeric, nutmeg, cinnamon, salt, pepper and sugar. Rub the spice mixture over both sides of the chops. Put the chops on a plate, cover loosely, and let stand while making the mango relish. (This can be done earlier in the day and the chops refrigerated.)
Preheat the broiler.
In a small bowl, mix the mango, kiwifruits and mint. Cover and set aside.
Broil the lamb chops 4" from the heat for 5-6 mins per side, turning once, for medium. Serve the chops with the mango-kiwi relish.
