Gazpacho-Veggie Twister -- 2 servings (1.5 cps each)
1 3/4 cps tomato juice or vegetable-tomato cocktail
2 small (4") pickling cucumbers (6oz), peeled and cubed
1/2 red bell pepper, peeled and cubed
1/2 rib celery, sliced
1 tbl lemon juice
2 tsp Worcestershire sauce
1 tsp green Tabasco sauce or 6 drops of regular Tabasco
Cucumber spears and lemon wedges (optional)
In a blender, combine the tomato juice or vegetable-tomato cocktail, cucumbers, bell pepper, celery, lemon juice, Worcestershire sauce and Tabasco sauce. Process for 1-2 mins or until smooth. Serve over ice. Cucumber spears and lemon wedges (optional).
