Herbed Basmati Rice Pilaf -- Serves 4; 214 cals/serving.

1 tbl extra virgin olive oil
1/4 cp white wine or apple juice
1/2 cp chopped onions
1/2 cp chopped celery
1/2 cp chopped apples
2 tsp minced garlic
3 cps cooked basmati rice
1/4 cp chopped fresh parsley
2 tbl chopped fresh herbs (such as tarragon, basil, marjoram or chervil)
salt and ground black pepper

In a 10" nonstick skillet over medium-high heat, combine the oil and the wine. Bring to a boil; add the onions, celery and apples. Cook and stir for 5 mins or until the onions are soft. Add the garlic and rice. Cook and stir for 5-8 mins or until the rice is slightly browned. Stir in the parsley and fresh herbs; add salt and pepper to taste.

Cook time: 15 mins
