Awesome Asian Style Soup
Buy a Costco rotisserie style roasted chicken. Serve white meat at one meal.
For soup, take remaining half and immerse it in gently boiling water, along with a walnut-sized chunk of fresh ginger and simmer until a rich looking broth appears (20 minutes?) Optional: add chunks of lemon grass bulb.
Add to broth and simmer together about 5 minutes or slightly more until noodles and vegetables are tender:
meat from bones, cooled and chopped
2 packages of soft Udon noodles or top ramen
1/2 cup of garlic miso (Thanks, Tobin!)
1 package of firm tofu sliced into thirds horizontally, and then continue cutting vertically so that cubes are of uniform size, (about 1 cm on a side). Place tofu cubes into a shallow container and pour teriyaki over, not too deep. Turn cubes periodically so that all sides get marinade. Marinate for a good 20 minutes. When adding to soup, pour in marinade as well.
Several cups of frozen stir fry vegetables (containing water chestnuts, baby corn, broccoli, snow peas, etc)
2 "baby" bok choy, chopped.
shot of hot sauce (enough to give a little kick to soup without being tangible.)
Possibly Thai fish sauce, 1 Tbsp suggested
At last minute add handfuls of mung bean sprouts, chopped basil, and chopped cilantro to bowls of soup.
A squeeze of lime juice is nice.
Many of these components are optional. But everything pungent adds immensely to the success of the soup.
