They went in the Jack Daniel's mesquite marinade around noon. I'll pull them out about 20-25 minutes before cooking to come to room temp. Into a hot cast-iron skillet (w/ a little peanut oil) for 30 seconds a side, and then straight into a pre-heated 500 degree oven for 2.5-4 minutes a side (depending on preferred doneness). The a rest on top of an bowl inverted over a larger plate and covered with aluminum foil for at least 5 minutes to let the juices redistribute.
I may be in a steak-induced coma later. It's probably a good thing I don't do this more often.
