Best pancake recipes?

Hi All,

For years I've made pancakes either following the Better Homes (New) Cook Book's "Favorite Pancakes" recipe or my whole wheat variation of it. However, my roommate has never been a fan of these as they are too much like "bread" for his taste. He loves IHOP's pancakes, however. So tonight I branched out and looked for a pancake recipe that would meet with his approval. Here's what I tried:

1 1/4c AP Flour
1/4c white/caster sugar
1 1/4tsp baking powder
1tsp baking soda
pinch salt (assumed 1/8tsp)
1 egg
1/4c oil
1 1/4c cultured buttermilk (In a pinch, use 3/4c plain greek yoghurt and 1/c milk.)

Add all ingredients to blender (or food processor, in my case, as I don't own a blender) and blend several seconds until smooth. Scrape down sides and blend a few more seconds. Let sit 10-15 minutes for flour to hydrate and first rise of baking powder to burn itself out. Meanwhile, heat griddle to 350F (or large frying pan over medium heat until bead of water skitters around on surface when dropped). Very lightly oil or butter surface. (I have a 14" frying pan and used 1/4tsp butter spread around the bottom with a silicone spatula.) Blend batter briefly again to burst larger bubbles and even out the consistency. Pour batter ~1/4c at a time onto griddle/pan to make ~4 inch pancakes. Wait until bubbles begin to break on surface and bottom edges look cooked before flipping. If bottoms are too brown when you flip, turn down the heat a little. Makes about 16 4" pancakes.

Results: Good. Excellent tender texture, very moist, good taste. However, a tad oily and a bit too sweet for my liking. Also, even though there's a lot of baking soda, they could use a touch more salt. The sugar appears to be used as a tenderizer here, but it would probably work with less. Also, with as much oil as these have, I probably wouldn't have needed to oil the pan. Next time I think I'll try only 2Tbsp oil, 2-3Tbsp sugar, and 1/4 tsp salt.
