Baking and birthdays

Anthony's away in London for the day - one of his university housemates is visiting from Australia so of course he's gone to see him. Naturally, I have taken advantage of this quiet time to veg out in the front of my beloved Wimbledon tennis tournament on the telly, avoid the sun (it burns! it burns!), and try out a new recipe.



These are Oreo Cheesecake Cookies and they look and smell delicious. I'm resisting eating them at the moment, but I cannot wait to have them as a pre-bed snack. I expect Anthony will polish one off once he's back from London too, after downing a pint of water and some much needed tea. I've been reminded of just how much I love baking. It's a real relaxant, just you and the kitchen and a culinary adventure. Of course it can be stressful but I always try and bake when I haven't got a time limit. In July, I'll be baking a Guiness cake again, for Anthony's birthday. For my birthday, Anthony's going to do a rare spot of baking himself and make me mini cheesecakes - a wrestler has a very funny cooking show on YouTube, his routines are comical but his recipes are sound and Anthony's keen to try it out for me. I'm very touched, as he doesn't enjoy baking all that much, but he'll have a go for me :)

Yep, Thursday is my birthday. I'm a 4th July baby and what will I be doing? Working. My co-worker accidentally booked off the one week of the year I always request off, my birthday week, but as he's never done it before in all the years we've worked together, I'm not complaining too much. I'm actually doing two weeks of 8am to 6pm shifts whilst he's away and I will get overtime pay for all the extra hours, so I am compensated. I'm determined to stay as stress-free as possible - I've got some relaxation exercises to help - and to see the long works days as a blessing, if I view them negatively before they even start, it'll make them drag and feel worse and I don't want that. I've hastily booked off Anthony's birthday week later in the month so at least I'll be off work for that. It'll be the first time ever I've worked on my birthday, my co-worker never books his own birthday off though, he never sees the day as anything special. I hope I always get excited about it. Anthony still does too. I like that. And despite the exhaustion I'll be feeling, I'm looking forward to it.
