Sure right now it is a diet fad, but once the fad disappears there are still people with allergies, intolerances and autoimmune deficiencies that prohibit them from eating it.
there are definitely people with legit intolerances but yeah, from working in a restaurant i'd guess that about 75 percent of the people who order off our GF menu don't actually have one
if people want to do it at home it's nbd, but once you go out in public then you're forcing other people to deal with it and that's obnoxious. at least at my restaurant, if somebody orders, like, a gluten-free salad then we have to wash/sanitize the cutting board, the cooks have to scrub their hands and put on gloves, the chicken has to be cooked on a sanitized part of the grill, etc--it turns what should be a 20-second process into a 3-minute ordeal that can back up the entire kitchen. and for people who actually have gluten intolerances that's not a huge problem, we know it's shitty to not have anything to eat and we want to get you something you can have--but when you're backing up the kitchen just because you think it's cute and quirky to be gluten-free then you're fucking annoying.
yeah most places with an actual gluten-free menu take it pretty seriously bc if they don't and somebody gets sick, they could end up getting sued. (which is also why some places refuse to make GF stuff altogether--because they don't have the space/staff to accommodate it and if anything does get contaminated from being cooked/prepped in the same space, then they're putting themselves at risk for lawsuits!)
lol I cannot imagine anyone actually winning a lawsuit on that basis
I got really sick from this restaurant, and I chalked it up to "annoying, but it happens and I should have looked at reviews before impulsively ordering from their gluten-free menu"
