Since those of us in the colder regions are looking at a winter of very high heating bills, my family is looking at ways to cut our budget. One way to do so without enormous changes to our lifestyle is via our grocery bill, so I'm hoping maybe we can have a thread here with different ideas (including recipes or not) of meals that are fairly inexpensive.
Some of my ideas:
Breakfast for dinner! Pancakes or waffles, with eggs on the side.
Chili, either vegetarian or with a small amount of meat added.
Beans and rice.
Risotto with just veggies or a small amount of meat.
Stir fry with veggies, tofu, over brown rice.
I'm trying to get back into the habit of buying dried beans instead of canned. I like to soak the beans in water overnight, then drain and cook in the crock during the day. I divide the beans up -- some for the fridge to be used within the next couple of days, and the rest in the freezer for future meals that can be made at the last minute. I'm also making hummus from scratch again (we love hummus and it's a great way to get protein into a finicky child, but it's quite expensive to buy it already-made in comparison to making it yourself if you have a food processor.)
