I sprinkled some garlic powder on the top after the parboiling, before sticking them in the oven. I imagine that you could make an entire batch of garlicky bagels if you added some crushed up garlic cloves to the dough at the time of kneading. But to be honest, I enjoyed the taste of the effectively roasted garlic powder when biting in to the bagel. Throw in the subsequent bite into cream cheese and it was really something fantastic.
Testing Note: Cinnamon-Sugar...'meh'. I don't know - maybe it would work better with standard bread/pizza dough as opposed to the sourdough. It didn't stop me from eating it and enjoying it though. :-)

My good friend Phil Elsworthy has a bagel party every new year's day, and I've gone for the last four years I think. Tunes and fresh hot bagels.... mmmm
Some notes: I don't know what dough he uses, but he does also use the boiling thingy. Then he butters or does something to them, and dips them in either sesame or the other one... umm?? Yeah... To form the bagel shape, he simply rolls out a long tube, curls it around, and twists the ends together by rolling, sort of. The bagels aren't "perfect" circles, but they taste really good!

Yeah I had the fleeting thought that maybe I should paint melted butter on them, but I was too hungry to do it. I think what that does is help brown the bagel - as you can see mine came out fairly pale despite being done and oh-so-tasty.
I never had bagels fresh out of the oven before this experience - I had no idea that I was missing out on something so enjoyable/comforting/giddi-fying. Kind of like when I discovered peanut butter and honey sandwiches last summer.
Phil's party gives me Shoggoth-themed ideas for the next generation of the New Year's tunes extravaganzas...
