It varies throughout the song. At one point he says beforehand 'I'll never forget the way you look tonight' (or something like that) and so when he says I won't do that he means forget. And so on throughout the song... :O)

He won't cheat on her. Later on in the song, she lists all these things that she thinks he'll do or she wants him to do, and he says that he'll "do that". Then she says that eventually he'll be "screwin' around" and he said that he won't do that. So basically he's saying that he won't cheat on her just for "love".

VH1 used to have this show called "Storytellers" where singers explained their songs and stuff. When Meatloaf did the show, he explained this song with like, a blackboard and a pointer thinger and it was really cute. (♥ - I have to admit a soft spot for the big guy; he's kind of a guilty pleasure. :P) Basically, all the bad stuff he mentions about love in the song is what he won't do.
