Ooh, a nice meme stolen from
queenortart here. I've been lax with books lately, so I'll try and give this a go (although loss of phone means it may not happen every day).

It's still Day 1, just!
So, while I agree with
queenortart here about the execrable Piers Anthony, I'll cast my net a little wider. For ones I wish had gone on longer, there are many choices, but the one which immediately springs to mind is Alex Robinson's comic 'Box Office Poison', because the flawed yet likeable lives of the characters are so engaging. It did get a couple of follow-up tales, but they were obviously a little less epic. I've enjoyed his other work too, but I never mind him revisiting BOP. And yes, I am happy with comics being 'books' here.
As for going on too long, one of the most obvious examples was Anne McCaffrey's '(Dragonriders of) Pern' series. While the earlier books were (despite some silliness) often provocative and riddled with tragedy, her inability to disassociate from her beloved favourite characters meant the whole thing rapidly became appalling mush, with very little in the way of surprise. It's a damn shame really, I still think 'Dragonquest' stands alone as a pacy, gripping work. But something like, say, 'The Renegades Of Pern' makes me want to take up book-burning. What with her very peculiar ideas about Teh Ghay, it's all rather sad really.
I encourage everyone to steal this meme.
