School Days!

Since I decided that I should go gluten-free a little under a year ago I have been trying to figure out what I can do that would be healthy for me, and still allow me to cook, and I think I have come up with an answer! I'm going to go back to school for dietetics. I think this is a great idea for me. I'd like to be able to help people more, and this would let me do what I really do enjoy, and also help people at the same time. I'm not sure what this is going to take from me, although I was looking at the program at SLU, and they seem to have a culinary degree with some extra physiology/biology classes. With the BA that I already have I should be able to knock out most of the general education type requirements. Although I think I am going to have to take calculus. I'll be able to get help with that though I am sure. Amy or my sister would be willing to help me. Some of the culinary classes I would imagine five years as a cook would either allow me to test out of or give me a serious advantage in. I mean Quantity Food Prep? Really?

In school I was actually really good at biology type classes, so this shouldn't be a big problem. I'll also have to take some chemistry, and bio-chemistry which I never had to take before.

I know it won't be easy, but I think I have FINALLY found the path that I should be on, and I am pretty stoked about it. Do I relish the idea of being an almost 38 year old Freshman in college? Not really, but it is not an insurmountable challenge.
