Ladykalessia, they do have an iPhone client, as a matter of fact, and one of the screen shots looks like it's recording (despite the fact that the short description implies that it's a viewer only), so I'll give that a go.
Waywardbound, that's exactly what I did. Works like a charm for the live stream, but if I then want to save the video (which of course I do), that saved video is immediately viewable by everyone in the world. Idiotic, but true. Go to my profile page at http://www.ustream.tv/user/TheBelgian and click on the "Archived Videos" tab on the right and you'll see something that I just recorded "live" with the iPhone as part of a password-protected show.

JustinTV is what the DNA is using to stream their live shows these days, since the RealServer crapped out, and well, nobody supports RealMedia anymore.

"Correct, you cannot password protect a recording. You can only set it to PRIVATE so that only friends can view it."
My reply (to which I've heard not a peep since):
"But this seems wrong. Why should saving a broadcast change it from private (password-protected) to public? This seems like a serious security issue.
"Perhaps there's a way to set the default privacy of saved videos to Friends Only instead of Public?"
Anyway, I've decided to just go with Qik and give everyone my password. It seems the more reliable of the 2, and is way less confusing than Ustream.
