I bought way too many peaches and nectarines a week ago at the farmers martket. by mid week we were kind of stone-fruited out and the rest of the fruit went untouched and soft in the fridge.
This morning I decided to get a little experimental in the kitchen and it turned in to one of the best things I've ever made.
A peach/nectarine cobbler-bar cookie like thing.
recipe as best as I can remember it:
2 cups rolled oats
1 cup brown sugar
1 1/2 cups flour
2 sticks cold butter
1tsp salt
mix all together and cut in the butter.
moosh all but a handful of mixture into the bottom of a 9x13' buttered baking dish
add 4 cups blended fruit over mooshed crust
( I boiled the blended fruit on the stove with a tblsp of sugar and a tsp of cornstarch first, but I don't really think that was necessary)
sprinkle remaining crumble mix over the top
bake one hourish at 350.
