Zuccini Casserole Recipe!

C's Zuccini Casserole (C was my grandmother. It is her farm house in kentucky that I can home.)

1 1/2 to 2 med to large Zuccinis sliced.
Put in pot and cook in water until soft.
Semi-mash with 3/4 stick of butter in casserole
dish. Set aside.

Mix 1/2 cup mayonnaise, 1/2 cup chopped onions, 1/2 cup grated sharp cheddar cheese, 1/4-1/2 cup chopped peppers, 2 eggs and dash (or more) of red pepper. Add 1 tsp sugar and 1 tsp salt.

Pour mixture over zuccinis. Add 1/4 cup almonds (optional)
Cover top with crushed Ritz (or substitute) crackers.

Bake at 350 degrees for 35-40 minutes until no longer soupy.
