If you're not into changing lenses on the fly, that may not change even if you have the right lenses in your bag. But one can be OTT about finding the perfect environment to change them, to be honest. Yes, you don't want crap getting in but also it's not like it has much time so unless the wind is actively blowing stuff in, you'll be fine... We've changed lenses in windy desserts in a completely open vehicle, regularly, just throw a fleece over the top or half do it in the rucksack. But yeah, we do help each other so we can get it done fast. It's no biggie. So perhaps R needs to decide whether it's really than annoying to lend a hand for the odd 15 seconds here or there out of an entire day. One option I find quite handy, though it doesn't eliminate my changing lenses, just reduces how often, is that I always have my backup body with me anyway... (If I'm on safari, and my camera body dies, I am shafted and I know some people enjoy those trips without a camera at all but that's not me, so I have to have a backup. Don't need backup lenses as have a mix anyway plus we can work it out between us). so I usually have one wider lens on one body and a long lens on the other. I seldom change the wide one but do switch the longer one as depends on what I need.
I agree totally that you can be too careful with perfect environment to change lenses, but when you're out hiking away from vehicles for extended periods of time it does become more of a challenge, for what I can physically carry and also lots of things happen on the fly that I miss because I don't have the right lens on.
Good thought on the back-up body. I may invest in one of those eventually, but again it becomes a weight/encumbrance issue too. Hiking 8-10 miles with a 5lb pack vs a 15lb pack makes a huge difference
Completely agree on your weight issues when hiking. Was referring to the worry about changing lenses and getting dirt in... unless it's windy, you should be fine on that front...
