So in attempts to eat healthier and cut down on my sugar I have been substituting a lot of ingredients in dessert recipes I find. The latest success story involves a recipe found here:
http://www.eatmedelicious.com/2007/11/perfect-chocolate-cinnamon-cake.html I was craving Starbuck's Chocolate Cinnamon bread one day and was looking up recipes instead of paying attention in class. Starbucks has their recipe for the pastry on their website but at 370 calories a serving, it's definitely not something your pancreas would appreciate you eating more than 1 slice of. The substitutions I made reduces the sugar per serving by a more than half and reduces the harmful fat content by replacing the butter with an avocado. The ingredient list of my altered recipe goes as follows:
• ¾ cup avocado
• ½ cup of sugar
• 2 eggs
• 1 cup all-purpose flour
• ½ cup Hershey’s special dark cocoa
• ½ tbsp. ground cinnamon
• ½ tsp salt
• ¼ tsp baking powder
• ¼ tsp baking soda
• 1/2 cup buttermilk - I used a ½ c of pumpkin puree and kefir mix, but you could use another substitue that is rather acidic like plain yogurt
• 1/8 cup of water
• ½ tsp of vanilla extract
The sugar spice crust is optional, but I did not include it. I followed the directions on the website(either starbucks or the one i posted works the same). Either way, the results of the altered recipe were great! The bread was super moist and not too sweet. Plus, ya get your potassium, omega-3s, and monosaturated fats from the avocado and live cultures if you use kefir or yogurt.
Also, because of my laziness and desire to lose weight by doing nothing, I am going to try out a new diet. I got the idea for this diet after I took advantage of the cereal bogo deal at publix, but then saw that the idea already existed. Still. I call this new diet I will try out the "Abed diet". ha. Cheerios and wheat cereal for 2 meals each day!
