Hedgehog.

So I was/am feeling a bit down today and - being the lazy/tired/cold person i am i decided i'd cook some comfort food instead of going to shops and buying some. So what better thing to mung into then some nice tasty hedgehog. It's not as warm and toasty as pudding, but it's something i can just have there in the fridge and hack into whenever i want - not to mention it's super easy to make.


♥For the Base:
1/2 Cup (125g) Butter (or Margarine)
2/3 Cup Caster Sugar
2 Tbs Cocoa
2 Tbs Coconut
1 Egg (beaten - I just whisk it in a bowl with a fork)
3/4 Cup Chopped Walnuts (*Optional, I never use them)
1/2 Tsp Vanilla Essence
2 Cups Crushed Sweet Biscuits (I use 'Nice' biscuits - Just chuck them in a big plastic bowl and bash them up with a glass bottle or the bottom of a jug, they don't all have to be super fine either it's really good when there's a few chunks here and there. Also you don't have to really measure what goes in, it's just about 1 1/2 packs, but you can tell when the mix is at the right consistency)

*Note: This is the standard recipe, but i always make a double batch and either divide it into two trays, or make one tray of really thick stuff.




♥ For the Icing:
It's dead easy, i just used icing sugar, cocoa and water.

Preparation Time: 15mins (extra 5mins for the icing)

What to do:

♥ Melt Butter (i chuck it in the microwave for about 30 seconds). Add sugar and cocoa and mix well. Stir in coconut and egg. Add walnuts and vanilla essence. Stir in biscuit crumbs and mix well. Press into slice tray and chill.




♥ While that's chillin' in the fridge you can make the icing, and by the time you've made it it's usually set enough. To make the icing just put the icing sugar and cocoa in a bowl and then keep adding water a tiny bit at a time until the consistency is right. It's really something you just do to taste, you can tell when it's too sweet or not sweet enough, and you can usually tell when there's enough mixture. This time i added a few shakes of dark drinking chocolate for a bit of variety, but you can do whatever you like.
Once the icing is right just spread over the base and decorate however you like. Some people sprinkle some coconut on top, but this time i decided to do a design with icing sugar.
