The Pioneer Woman's blog and recently decided to make a recipe that she had posted for
Crash Hot Potatoes. They were YUMMY but took a while to boil then bake/broil when he made them.
We had some red potatoes left over on the counter and I decided to attempt a quick and dirty version. I took one potato, washed it, stabbed it with a fork multiple times, then put it in the microwave for five minutes. When it was done, I smashed it with the potato masher (second mash was probably too much - it stuck to the masher some), ground some sea salt on it and some rosemary (I'm not a big pepper person, so in other words, salt, pepper and otherwise season to taste). I probably could have put it in the oven to finish, but I was hungry and impatient, so I just put some olive oil in a frying pan and a little on top of the potato and put it crashed/more open face side down in the pan for a few minutes and it was done.
Quick and simple under 10 minute version of the recipe in the link. Granted, the recipe in the link's way is a bit better if you have the time to kill, but if you're dining for smaller numbers or don't have time to wait for water to boil and whatnot, my method may work for you.
There's three potatoes left on the counter. I suspect they'll serve as new "crash" victims tomorrow. :)
