Recipe Exchange

A friend emailed me about doing a recipe exchange with some of her friends and I took the bait... here's the recipe I sent. I have pictures that I took of this and some of my other recent lunch creations that I'll get around to posting one of these days... I came up with this recipe earlier this week based on stuff I had in the house and a few other online recipes for red cabbage cole slaw...

1/2 red cabbage (about 6 cups shredded in the food processor unless you're feeling enthusiastic with a knife)

4 apples (I used Gala apples which may be a more Michigan local thing - find a sweet apple that you like, quarter it, then send it through the food processor too or slice similar to the cabbage)

1 red bell pepper (cut open, remove seeds & stem, food processor/slice)

1 yellow bell pepper (cut open, remove seeds & stem, food processor/slice)

lemon juice (or probably most of one lemon? It keeps the apples from browning and gives just a hint of additional flavor)

Mix and enjoy... a lot... I made it last Monday and the apples were still good as of yesterday... might be good for larger families/gatherings... but my recipes generally expand to fill the size of the available container(s) and I like batching things to eat for multiple meals...

If you'd like to participate in this pseudo-LJ MEME version of the exchange, go post a recipe in your journal and encourage interested parties to do the same :) Ideally it'll be something simple to make that you could type up without consulting a recipe book or going to a specialized store for exotic ingredients, etc.
