INGREDIENTS FOR MARINADE (Prepare salsa while fish is marinating)
2 Garlic Cloves, minced
Juice of 1 Lime
1 Bunch Cilantro, rinsed, stems removed
2 Tbsp Olive Oil
Salt and Pepper
6 Mahi Mahi Fillets
METHOD
In large zip-lock bag combine first five ingredients. Add Mahi Mahi and marinate for half and hour. Heat grill to smoking. Rub grill with oil. Grill fish top side down for 3 to 4 minutes, flip and grill 2 to 3 more minutes.
Serve with salsa.
INGREDIENTS FOR SALSA
1 Fresh Pineapple, cleaned and sliced into 1-1/2-inch rings
1 Red Onion, diced
4 Roma Tomatoes, seeded, diced
1/2 Bunch Cilantro, rinsed, stems removed
1 Garlic Clove, minced
1 Jalapeno, minced
2 Limes, zested and juiced
Olive Oil
Salt and Pepper
METHOD
Heat grill and place pineapple on grill to mark (about 3 minutes each side). Remove and dice to 1/4-inch thick. Place in a large bowl with onion, tomatoes, cilantro, garlic, jalapeno, lime juice, lime zest, olive oil, salt and pepper and gently toss. Serve over fish with steamed rice. -
