So the great 'defrosting' of 2011 has begun. The meats that I get shipped here from Alaska, Montana, Colorado, North Dakota all come air tight plastics and they are placed inside the 'Dog Proof' walk-in kennel. Many people keep dogs inside the kennels but no we are placing our meats in there to defrost and the dogs are on the outside.

I've been using the Photon Canon again and again. LOVE to use it to blow everything clean.
Today is hosing and wiping down chairs and tables and the FIRST run to Costco.

We now have a wireless printer thanks to Chaim!

There are 4 teams for the Iron Chef BBQ. The 4 possible meats have been announced to them. They have to guess which one to bring enough spices and additional ingredients to enjoy.

Our method and order are pretty set. I open with a ton of chicken wings with different toppings, First duck, and first of the Bison are next. Lamb is on the spit. Bill grills both London Broil and Carabou followed by many different sausages. Kangaroo, Reindeer...

The American Beef Counsel stuff has arrived. The Elk is DANGEROUSLY close calling it to arrive tomorrow, Friday. PLEASE PLEASE PLEASE...

I'm hearing from many guests about their plans to bring their best side dishes and desserts.

This year at the entry will be the Tag & Release Table as well as the Sign In and what is your side dish.
