Mmm... don't they look so good? For Day 3, I compiled some healthy and sometimes unusual potato recipes. Enjoy!



Sweet Potato Spread

Can be eaten with crackers or pita chips, or as a substitute for butter.

Ingredients
2 medium sweet potatoes
1 medium onion, minced
1 tablespoon maple syrup
1 tablespoon Tahini
Salt and pepper to taste

Procedure
Preheat oven to 350 degrees. Bake potatoes 30 to 40 minutes, or until soft. While potatoes bake, heat water or veggie broth in a saucepan over medium heat. Saute onion 15 to 20 minutes or until golden brown.

Place cooked onions in food processor; blend a few seconds. Scoop out potato flesh; place in processor with onions.

Blend and add maple syrup, tahini, salt and pepper; blend again until smooth. Sample spread, adjusting maple syrup/tahini to taste. Serve warm or cover and refrigerate. Makes about 3 cups.

Note: Can be made 1 to 2 days ahead.

Potato Chocolate Cake

Ingredients
2 cups sifted flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine
2 cups sugar
4 eggs (or egg substitute equivalent)
3 squares unsweetened chocolate, melted
1 teaspoon vanilla extract
1 cup prepared instant mashed potatoes, cold
3/4 cup buttermilk

Procedure
Preheat oven to 375 degrees. In a large bowl, cream together margarine or shortening and sugar. Add eggs one at a time; beat thoroughly after each addition. Stir in melted chocolate, vanilla and cold mashed potatoes. Mix well and set aside.

In a separate bowl, combine sifted flour, baking soda and salt. Add this sifted dry mix to the batter alternately with the buttermilk. Blend well with each addition.

Pour batter into greased and floured baking pans. If using two 9-inch pans, then bake for 20 minutes. If using one 13x9x2-inch flat pan, then bake for 45 minutes. If using one 9-inch tube pan, then bake for 1 hour.

Variation: For Chocolate Spice Cake add 1 teaspoon cinnamon and allspice to sifted dry mix. One cup raisins and/or nutmeats may be added.

Potato Pancakes

Ingredients
4 medium potatoes, grated
1 onion, minced
1 egg white, slightly beaten
3 tbsp. applesauce, unsweetened
1/3 cup whole wheat flour
1/4 tsp. nutmeg
1 tsp. fruit sugar
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. Bragg's seasoning, or sea salt
1 tbsp. canola oil

Procedure
Add the grated potatoes with all of the ingredients, except the flour. Mix well. Add enough of the flour so that the mixture will stick together. Drop by 1/4 cup into a hot skillet until lightly browned on both sides.

Nice and Easy Nicoise Salad

Ingredients
1 1/3 pounds (4 medium) potatoes (cut into 1/4-inch slices)
2 cans (6 1/8 ounces each) tuna packed in water (thoroughly drained)
3/4 cup prepared reduced calorie red wine vinaigrette dressing (divided)
4 butter lettuce leaves
8 ounces (half a 16-ounce package) frozen whole green beans (thawed and drained)
1 1/2 cups cherry tomatoes (halved)
1 small red onion (sliced)
1 can (3 1/4 ounces) pitted ripe olives (drained)

Procedure

Place potatoes in shallow 1 1/2-to 2-quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until tender; cool. In seperate bowls lightly toss potatoes and tuna with 2 tablespoons vinaigrette each; set aside. Line platter with lettuce. Arrange potatoes, tuna and remaining ingredients except vinaigrette on lettuce. Drizzle with remaining vinaigrette.

Pan-Pacific Potato-Shrimp Kebabs

Ingredients
1 teaspoon red pepper flakes
1 1/3 pounds (4 medium) potatoes, cut into 1 1/2-inch chunks
1 pound large shrimp, peeled
1 each red and green bell pepper, cut into 1-inch squares
4 green onions, cut into 1 1/2 inch pieces

Pan-Pacific Marinade:
2/3 cup rice vinegar
1/2 cup reduced-sodium soy sauce
1/4 cup minced ginger
1/4 cup chopped cilantro
4 cloves garlic, minced
2 tablespoons sugar
2 teaspoons sesame oil

Procedure
Place potatoes in shallow 1 1/2 to 2-quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until just tender. Meanwhile, heat broiler. Onto 8 (12-inch) metal or bamboo skewers, alternately thread potatoes, shrimp, bell peppers and onions. Place on rimmed baking sheet. In bowl whisk together marinade ingredients; pour marinade over skewers. Let stand 10 minutes. Broil 4 to 5 inches from heat source about 8 minutes, turning once and basting occasionally with marinade, until vegetables are tender and shrimp are opaque throughout.
