Red Velvet Cupcakes
Ingredients:
Cake:
1-1/2 cup sugar
1/2 cup (56.7g) butter
2 eggs
2-1/3 cup cake flour
2 tbsp cocoa powder
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup buttermilk (if you cannot find buttermilk, just add 1 tbsp lemon juice to 1 cup milk and let sit for a minute before adding to mixture)
1-1/2 tbsp colouring
1 tsp vanilla
1 tsp vinegar
Cream Cheese Icing:
1/2 cup (56.7g) butter
8 oz. (250g) cream cheese
2-3 cup icing sugar
1 tsp vanilla
Preheat oven to 176C.
Beat butter and sugar till light and fluffy, about a minute on high. Add eggs 1 at a time and mix thoroughly. In a separate bowl, sift flour, cocoa powder, baking soda, baking powder and salt. In a third separate bowl, whish buttermilk, vinegar, vanilla and food colouring. Add a quarter of dry ingredients to the initial cream (butter and sugar mixture), then a third of the dry ingredients. Repeat and end with dry ingredients. Fill half cupcake liners with batter and bake for 18-22 mins, or until cake tester inserted into middle of cupcakes comes out clean. Makes about a dozen and a half.
For the icing: Cream butter and sugar till light and fluffy. Add vanilla, and then gradually add sugar until desired sweetness.
