I've attempted to make KK like donuts and my biggest downfall was not deflating them when transferring them into the oil.

You didn't say which flour you're using. If you're using something other than Martha White then that's your problem. Switch to half cake flour and half all-purpose. Southern flour is lower protein than Northern flour.

Also, In'N'Out doesn't go any further east than Arizona.

I'm looking forward to reading the recipe, but wanted to comment before I forgot. What happened to KK in NYC? Did they close? Before I moved upstate, there were at least a few. Not that I personally understand the appeal, but I know they're popular.
