I have always had a problem making fried chicken (the skin comes off, it's too dry, burnt, etc...) but I just got a brand new cast iron skillet and decided to scour the internet for a recipe I didn't think I would fail at.
Found one! Alton Brown's fried chicken recipe was a complete success.
The skin stayed on, the inside was moist and juicy and most importantly, I did not burn it. *bows*
