Salt potatoes!

Growing up, my ma often made a side dish called “salt potatoes.” After moving to California, I had no idea that salt potatoes hadn’t made it all the way to the west coast. Even the BF, who grew up in southern New York, ( had never heard of salt potatoes. )

I mean, we normally have boiled taters, but add salt at the end.

Salt potatoes are nothing like that. When the potatoes dry, they have a delicious salty crust on them. Generally, only minimal butter is needed, and they're even delicious cold as a quick snack.

Leftover salt potatoes never make it to being reheated in my house because I always eat them straight out of the fridge.

i took the leftovers and smashed them down and ... fried them up in some butter on both sides so they got nice and crispy. dear. lord. send. help. lol

I've lived in CNY my entire life and it amazes me that people don't know about salt potatoes. Best potato ever.

They're similar but not quite the same - from what I've had patatas canarias are a lot drier than what we central NYers call salt potatoes.

usually i salt my water when boiling potatoes, but not that much. i love anything salty and will have to try that amount next time :D

Surprisingly, they're not that salty.

(Orleans County here, -- halfway between the Falls and Rochester)
