I wanted to share the food I've been making and eating the last few weeks, especially since at least a couple of them were inspired by posts here. :-)
Cook's Illustrated's "Chicken Curry in a Hurry"
Basically leftover rotisserie chicken, canned chickpeas, frozen peas, and cranberries. I thought it was OK the first night I ate it, and each night thereafter it became progressively more delicious. This is one of those dishes I'd recommend making days in advance before eating.

Potatoes Au Gratin (Slow Cooker)
I ate this with rotisserie chicken (which is where the leftovers to make the above curry came from). The recipe for the potatoes comes from Make It Fast, Cook It Slow.

The Pioneer Woman's Restaurant-Style Salsa
Oh man, I'm never buying salsa again. This was so easy and awesome. It made me want to eat nachos all the time.

Tomato and Cucumber Salad
A very summery salad. It's soooo easy and soooo delicious. If I want it to have an Asian flavor I use seasoned rice vinegar and sesame oil; if I want it to taste more Mediterranean I add a bit of feta and dress with balsamic vinaigrette.

White Chicken Chili
Again, made with leftover chicken! One chicken can go really far if you make it do so! I've never had white chicken chili before and OMG I was so deprived! I really thought it was going to be boring and uninteresting, unlike regular chili (which I loooooove). While this is NOT like red chili at all, it's totally its own kind of awesome.

Sun Gold Tomatoes
I've been using these homegrown babies in pasta (mixed in with some fresh pesto, mmm), on caprese sandwiches, and eaten plain because they're so sweet and delicious. It's the first year I've ever grown tomatoes, and I'm so glad I did.
Cocktail Meatballs
Whenever people ask what they can serve as an appetizer for a casual party I always suggest these meatballs. It's a recipe you can find pretty much anywhere, coating meatballs with sauce made from Heinz chili sauce and grape jelly. It's so good!
Turkey Meatballs
Speaking of meatballs... Sadly I only have a picture of the meatball mixture, because I forgot to take one after I actually made the meatballs, and then after they were done I totally forgot about taking a picture because I was too busy eating. Someone had posted a Cook's Illustrated recipe for meatballs, either on this comm or on another cooking comm, and it is FABULOUS with ground turkey, which I usually find bland and uninteresting.
French Onion Soup (Slow Cooker)
Another recipe from Make It Fast, Cook It Slow. A friend of mine wanted to make this. It was really yummy, but very dependent on the quality of beef stock you use. If I made French onion soup again it likely won't be in a Crock Pot.

Strawberry Sour Cream Pie
I KNOW the idea for this one came from LJ! I chose to make Rose Levy Berenbaum's flaky cream cheese pie crust. OMG. It is so, so wonderful. My favorite pie crust by far, but how could it be anything less than awesome, with butter AND cream cheese involved??? The filling was a bit too gluey for my taste (and I accidentally burned the pie crust a bit, sigh), but it was a snap to make.
