Roasted Beet Salad- first post
Roasted beet salad with crumbled blue cheese and walnuts, I thought about adding mandarin oranges but I didn't have them on hand.
I have started eating beets about 5 years ago but I still have only eating them probably once a year, still trying to get over the childhood fear of beets. This a salad was actually good.
