Pulled Pork Sandwiches, Creamy Coleslaw, and Summer Bean Salsa

My dad is a truly amazing man. He taught me about Jesus, brushed my hair into a ponytail every morning before school, and worked 2-3 jobs at a time to support our family. I could never thank him enough, but I always try. This Father's Day, I wrote a tribute post to him including some of the many, many reasons I love him!

The post also includes one of his famous meals -- a delicious barbecue rub to create pulled pork sandwiches. My mom's slightly sweet, complementary coleslaw and fresh summer bean salsa and thrown in as well. Enjoy!





Best Barbecue Rub

Recipe By: Chris Schlesinger

Ingredients:
2 tablespoons salt
2 tablespoons sugar (or use splenda for low-carb BBQ)
2 tablespoons brown sugar (or use brown sugar substitute for low-carb BBQ)
2 tablespoons cumin
2 tablespoons chili powder
2 tablespoons black pepper
1 tablespoon cayenne pepper
4 tablespoons paprika
2 tablespoons garlic powder

Directions:
Mix together. To use, rub into meat and let sit overnight (or as long as possible) before grilling.
