Lemon-Raspberry Mousse Cupcakes = Heaven

These are the best cupcakes I've made in a while...
after my last strawberry/orange disaster or a cupcake, I've been a bit wary of trying again.. UNTIL yesterday.

These are like drinking a tall glass of raspberry-lemonade in a pretty little paper cup.
Highly recommended!!

These look delicious and I'm thinking of making them for my office... Did part of the recipe get cut off at the end? Do you just fold the chilled raspberry mixture into whipped cream at the end?

Haha yes it did! Thank you for letting me know, I'll make sure to fix it right away.
For the record, you've pretty much got it down, and I brought a dozen to my office this morning and they were gone in less than a minute!

End of recipe:

Beat heavy cream on high until stiff peaks form. Mix about a third of the whipped cream into raspberry mixture until well combined. Fold in remaining whipped cream.

Pipe mousse onto the cupcakes and then garnished with fresh raspberries!!

Those look amazing! I'd never have thought of putting mousse on a cupcake, but it seems like the perfect thing for spring. I must make these.

This reminds me of the homemade treats my uncle used to make for me when i was younger.

They also sound like the perfect comfort snack!
