Baked Catfish

French Fried Onion Encrusted Catfish, Mashed Red & Sweet Potatoes with Fresh Herbs and Black Eyed Peas with Kale.

The fish recipe came together based upon what I had (and didn't have) in the pantry. I had originally wanted to deep fry the fish, but was out of baking powder and eggs and din't feel like treking out to get some. That being said, I dredged the fillets in flour, then dipped them into some butter milk and then coated them with the crushed french fried onions (of green bean casserole fame). I baked them for 15 minutes at 400 F. Simply amazing. There's one for the cook book.
