Stuffed squash

Tonight's dinner:  Acorn squash, topped with a thick butter / brown sugar / marsalla wine sauce, and stuffed with hot italian sausage, apples, onions and shallots all cooked in marsalla wine and sage.  On the side - spinach with herbed goat cheese mixed in.

Thanks!! It really was pretty incredible. I wish I cooked like this more often :D In fact, cooking this kind of made me wish I had a job coming up with recipes for a restaurant, because I really enjoyed creating it.

The secret to perfectly cooked squash is to steam it in the microwave ;) Roasted is good too, but the microwave turns out perfect every time and only takes about 10-12 minutes.

I've never tried acorn squash, but I have a butternut squash that is waiting for inspiration. Are the flavors roughly similar enough I steal your recipe?

Yup! Acorn and butternut squash are very similar in flavor, I use them interchangeably.

Mine doesn't like it as much as I do - but he loved this!

Then again, "as much as I do" includes happily eating squash and nothing but squash, with a little cinnamon and butter, as a meal. I might be a squash-o-holic. :D

Mine doesn't like it much. He'll put up with it a few times a month, otherwise I'm eating it myself. But I guess that's ok because it means more for me!

Ah...I'm lucky that mine does like squash. I think the meat stuffing would be pretty tasty over pasta as well, so you could modify it for his tastes.

OOH idea! A sweet meaty sauce, over squash ravioli. *drool* I might have to try this. :D
