I made such a yummy dinner last night and just had to share :D
If you eat fish.. Tuna burgers! Sauteed yellow/red/orange peppers! Roasted red potatoes and asparagus!
Unfortunately this isn't a recipe that includes amounts of things since I just made it up as I went...
In an oven safe casserole dish thingy I put in cut up red potatoes, extra virgin olive oil, thyme, minced garlic, rosemary, and salt. Let it sit in the oven at around 325 (I've got a gas stove though.. took some playing around with since I'm not used to it yet) for 20 minutes. Then added in one bunch of asparagus trimed and then cut into 1 inch pieces with a bit more oil and a but more of the salt and spices. Let it sit in the oven too until it seemed ready (ie: I tasted a potato and it seemed cooked...)
I made tuna burgers at the same time - 2 cans of tuna, 2 eggs, italian spices and bread crumbs mixed in a bowl first then made into medium size patties that I cooked in a pan with a bit of cooking spray.
I also sauteed cut up red/yellow/orange pepper in a pan with a bit of extra virgin olive oil and italian spices.
