Gluten Free Southern Fried Chicken

As I'm coeliac there is basically NO fast food in my life, which on the whole is a good thing. Eating healthy makes me feel healthy...but sometimes you just want greasy comfort food. Being British pretty much the only southern fried chicken we have over here is KFC, and obviously it has incredible amounts of gluten and is a complete no no.

We have to walk past a KFC outlet every day to get to our house and my boyfriend always looks at it longingly, but feels bad if he gets it as I won't be able to have any. He's had to look after me for a few days while I've been sick so I decided to make him something special.

With that in mind today I made a gluten free version, (but a little spicier). I ended up having to make gluten free bread in order to then make seasoned breadcrumbs, but my was it worth it. It was wonderful to have fried chicken again, and to not have it greasy and made of death was heavenly! Plus my boyfriend actually said he liked it better than KFC, he's probably just being nice but was still pretty exciting ^^
