This last weekend I made a Fool's Gold sandwich. So named because it was created/served at the Colorado Mine Company, where it cost $49.95 (and that was back in the day!). Apparently Elvis was a big fan of the sandwich (not surprising). No idea how much of this is true. Read all about this legendary sandwich
here.
You're supposed to use an entire French loaf but I couldn't go that far. I just made a "mini" sandwich and I'm sure that was quite artery clogging enough.
First you butter the outside of a roll of bread, then bake at 350°F until it's golden brown, like so (I used my toaster oven):
While that's baking, fry up some bacon. The original sandwich uses one whole pound of bacon, but I used a modest 4 slices. When the bread's done, cut it down the middle on one side. You're supposed to take out the soft middle so the peanut butter and jelly have a big pocket to sit in, but I skipped that part. Slather one side with peanut butter and the other with jelly (supposed to be grape, but I used what I had on hand, strawberry rhubarb). The real loaf uses one whole jar of jelly and one whole jar of peanut butter. I probably used a couple tablespoons of each.
Layer the bacon inside.
Close the sandwich and watch the peanut butter and jelly ooze over the bacon. Eat and enjoy that sweet savory porky goodness!
