No pictures, but I've done some amazing things with a fridge full of leftovers this weekend. I'm quite proud of myself, really.
In the fridge:
mashed potatoes
red, yellow, and orange pepper slices
about 1/2 cup of leftover fondue (smoked gouda, cheddar, bacon, hard cider, curry powder)
eight or so English bangers
a cup of roasted herbed potatoes
several apples, cored, peeled, and sliced
I wound up making a delicious brunch for two friends, my husband, and myself. First, I took the leftover mashed potatoes. I originally intended on making them into potato pancakes by frying them up in formed patties, but that didn't work out so well. So I just mixed it all up in the frying pan. When they got nice and soft, I added the bangers, cut into bite-sized pieces. it needed a bit more, so once I saw it was nearing the right temperature, I added the fondue. I let it cook a while longer, and served. My goodness, it was thick, creamy heaven on a plate. Salty, cheesey, and FILLING!
Because the rest of brunch consisted of the Flying Biscuit's creamy, dreamy white cheddar grits, scrambled eggs, and English muffins, I thought we could use a bit of something healthy. Er. I had a large tub of apples that had been prepped for the previous night's fondue party, but never made it out to the plate. I couldn't leave them in the fridge too long. They'd still brown despite the lemon juice that had been added to slow the oxidation. So I opened the container, added about a half teaspoon of cinnamon, closed the lid, and shook the dickens out of it! Cinnamon apples! Delicious and simple! They were gone in minutes.
The next day, Husband was hungry, so I put the roasted potatoes in a dry frying pan with the leftover peppers. At first, I was going to just let them cook the way they were, but then decided I needed to add a bit more. A few dashes of balsamic vinegar was incorporated, and the potatoes and peppers took on a lovely roasted appearance as they cooked up. Husband was quite happy.
Simple, I know. But I was pleased that there were so many leftovers used in creative ways this weekend, rather than my usual "reheat and eat" solution to finish them off before they go bad.
