Roasted Beet and Fennel Salad with Heirloom Tomatoes

My CSA box was loaded with so many good things this week.  There was fennel, tons of tomatos, and beets. I made a lovely salad.






I love this variety of beet.  The flavor isn't as intense and they don't bleed when you cut into them.
