rhubarb cake

To make up for my pictureless post earlier, here's a picture of the rhubarb cake I just made.
Recipe, too!






Recipe:
cream 1/2 c. butter and 1 1/2 c brown sugar.
blend in 1 t. vanilla and 1 egg.
sift 2 c flour, 1/4 t salt and 1 t baking soda.
combine 1 T lemon juice with 1 c milk; add alternately with flour to the creamed mixture.
fold 2 c chopped fresh rhubarb into batter.
pour into buttered 9X13 pan.
blend 1/2 c ch walnuts, 1/2 c sugar and 1 t cinnamon; sprinkle over top of batter.
bake at 350 for 45 minutes.
cool at least 30 minutes in pan

As a bonus, I ran out of regular flour and had to use almost all whole wheat - so it's actually healthy! Sort of. Maybe I'll have cake for breakfast tomorrow! :)
