Satay beef, peanut dipping sauce & crab leg soup

I've been a cooking fool this weekend! Friday's dinner was Thai: satay beef with peanut dip & crab leg soup.






SATAY BEEF

Top round steak
Teriyaki sauce, 1 cup
Garlic, 4 cloves (crushed)
Chili sauce, 3 tbsp
Sesame seeds, 2 tbsp
Green onions, 1 stalk
Juice of lime, 1

Cut steak into strips (against the grain). Mix teriyaki sauce, garlic & chili sauce. Marinade the steak in that while you toast the sesame seeds & chop the green onions. (It really takes no time at all for the meat to soak up that flavor.) Skewer the steak and grill just about 3 minutes each side. When done, squeeze juice of lime over them. Garnish with sesame seeds & green onions. (This part is really optional, but I think it adds another dimension. Plus it makes it look pretty.) I served them over a bed of fried rice - just the boxed kind & I added egg & peas. This dish works great with chicken tenders, too. Next time I'm going use that, so I don't have to cut them.

PEANUT DIPPING SAUCE

Teriyaki sauce, 1/2 cup
Apple juice, 1 cup
Ginger, 1 inch piece (peeled)
Peanut butter, 1 cup
Zest of lime, 1

I really enjoy the meat without any dip. But it's traditional to serve it with, and my family likes it. Next time, I will increase the liquid, though, to make it more like a sauce than a dip. Above is the altered recipe I plan to use next time. In a saucepot, combine teriyaki & apple juice. Throw in the chunk of ginger and bring to a boil. Turn off the heat & let it set while separately, you whisk the zest of lime with the peanut butter. Discard the ginger & incorporate the teriyaki mixture into the peanut butter with a whisk. Add either peanut butter or apple juice till it's the consistency you want.

CRAB LEG SOUP

Beef broth, 4 cups
Soy sauce, 1 tbsp
Sesame oil, drizzle
chili sauce, to taste
ginger, 1/2 tsp (grated)
salt, dash
king crab leg meat (or imitation)
silver noodles (or rice sticks or udon or ramen noodles)
green onions, 1 stalk (including ends)
Lime, 1

This is the dish I'm proudest of, because I invented it myself. There's really not much to it, but it was really declicious, inexpensive and easy to whip up! In a saucepot, combine broth, soy sauce, sesame oil, chili sauce & salt. Grate ginger into it & bring to a boil. Add noodles & crab leg meat (I like the immitation, and it costs like 2 bucks.) Reduce heat & simmer a few minutes. Meanwhile, slice the green onions. When noodles are done, turn off the heat. Add the green onions and lime juice. Serve with a lime wedge, and put the chili sauce on the table.
