May I ask how long you roasted the roast, and at what temp? It looks so perfectly done. Whenever I strap two loins together (ahem) I can never get the whole shebang that evenly cooked.

I have a grill with four burner strips. I browned the roast first and then turned off the two middle burners. The temperature on the grill was about 400 deg F. I added the herb rub and let it roast away in the smoky confines of the grill. This was about a 1.7 pound roast and it took about 45-50 minutes or so to get to an interior temperature of 130 deg F. I then pulled it from the grill and let it sit, covered with foil, for about 15 minutes. It was a perfect 155 deg F and was very moist.

I couldn't see any carbs in your meal is what I meant, and I'm not meant to be having too many at the moment so it was good inspiration! Having said that though, I had pasta for dinner...oops.
