for those wondering, polvilho is tapioca/manioc starch.

i like to use shredded parmesan when I make it.

really? I would think tapioca starch would be rather strange to bake with. D: but that looks rlyrly good. :]

The eggs and cheese help with binding. :)

If you live in the US and want a ready-made mix, Chebe is a name brand. If you have a Brazilian market, there are other brands--just look for pão de queijo on the label somewhere.
